Hmmmm... What's For Lunch?

Several nights ago, I served grilled Ahi Tuna steaks, steamed fresh asparagus & baked potatoes. We didn't eat all of our tuna steaks and I couldn't bear to throw them out, so I covered them & stuck them in the fridge. So, today when I started thinking about what to have for lunch I decided to make Ahi Tuna Salad. Now, I don't think I can ever return to the world of canned tuna salad. Crummy canned tuna, Bah! It just won't be the same. Using the fresh tuna makes the salad ever so much richer and flavorful. Here's my version of Ahi Tuna Salad:

Ahi Tuna Salad

1. Leftover grilled Ahi tuna (mine worked out to be about 2-1/2 cups)

2. Mayonnaise, to desired consistency (I use Hellman's Light because it's the least gagging of the lite mayos)

3. Dill Relish (Most people use sweet relish, but I prefer dill, sour puss that I am)

4. 2 hard boiled eggs, peeled & chopped

5. 3-4 large stalks of celery, chopped

6. Black Pepper, to taste

I place the tuna steaks in the bowl and tear them up with my fingers.










Next, I chop the celery & the hard boiled eggs, adding them to the bowl.


Then, I add the mayonnaise, dill relish and the pepper and toss until everything is thoroughly mixed.

Voila! I had mine with some wonderful little healthy crackers and it was excellent!

That is waaay too healthy for me, but it does look delish. The ahi tuna would be the kicker. Oh, and yes, sour dill over sweet relish any day. I have a killer chicken salad recipe I made back when I owned a deli. Grilled chicken breast that has been cubed, mayo, raisins, crushed pineapple, finely chopped water chestnuts and a shot of amaretto. It was heavenly. I must make it sometime and blog about it.

Sounds almost perfect, but I have this freakish aversion to hard-boiled eggs in tuna salad.

Otherwise, we make a very similar tuna salad. I often also toss in some freshly-chopped parsley or green onion just for color and a several shakes of red pepper flakes for kick. Sometimes I use a little chipotle mayo for some extra zing too.

Then serve on Mission "Carb Balance" whole grain tortillas (LOADS o' protein & fiber!) with some shredded cheese and lettuce. Makes for a very healthy & filling lunch!

Well, I love chicken salad too!

Good idea on the pepper flakes Rob. I usually add parsley & chpd. onions to chicken salad.

Hubby likes apples or grapes chopped up in his tuna salad, so he gets them on the side, because I don't. Yuck!

Mainly, I posted the recipe because my daughter wanted it & she can't even boil an egg, lol. This way, maybe she'll quit calling me for it every time she needs it.

Ummm I just read your comment and as I was reading this post I though, "oh good I have been wanting this recipe" haha. I finally finished the pasta salad you told me how to make (yeah that's right, pasta salad can be a challenge for some) and next I'm going to conquer the tuna salad! I am still very intimidated by Dad's caesar salad and have yet to attempt it...

QM, we are HUGE fans of the Ahi here too. I actually had to zap the tuna for a minute in the micro because they were too rare for tuna salad. After L.A. I'm now a sushi snob. I can only eat it @ Katsuya in Hollywood. ;-P
